Prepare yourself for a BBQ experience that will redefine your standards. We’re taking a whole chicken, spatchcocking it for even cooking, and coating it in the deeply complex, savory, and smoky Culinary Icon Better BBQ rub.
We then cook it low and slow, then baste it with a signature BBQ sauce that caramelizes into a lacquer, creating a flavor profile that is part sweet, part heat, and pure perfection. This isn't just a meal; it's a statement.

🛒 The Ingredients
For the Better BBQ Spatchcock Chicken:
-
1 whole roasting chicken (about 4–5 lbs)
-
¼ cup extra virgin olive oil
-
¼ cup Culinary Icon Better BBQ Gourmet Smoked Rub (divided)
-
1 tsp fine sea salt
The Smoked & Spiked BBQ Lacquer:
-
1 ½ cups your favorite tomato-based BBQ sauce base (or use the ramekin's sauce from our photo)
-
1/4 cup dark brown sugar
-
1 tablespoon apple cider vinegar
-
1 tablespoon Worcestershire sauce
-
1 tablespoon Culinary Icon Better BBQ Gourmet Smoked Rub
-
½ teaspoon cayenne pepper (optional, for gentle heat)
-
Optional: 1 tbsp Bourbon for a truly 'spiked' finish
The Comfort Side Kick:
-
2 lbs green beans, trimmed

The Instructions
- Prepare and Spatchcock the Chicken (The 'Why' of the Half Chicken look):
-
Chef's Note: While our visual shows a beautiful half chicken, we are starting with a full spatchcocked bird for maximum yield. You can split it in half after cooking for the perfect plate presentation.
-
On a clean, sturdy cutting board, flip the chicken breast-side down. Using heavy-duty kitchen shears, cut along both sides of the backbone to remove it completely. (Discard or save for stock). Flip the chicken over and press down hard on the breastbone with your palm until you hear it crack. The chicken should now lie flat.
2. The Better BBQ Seasoning:
-
Pat the chicken completely dry with paper towels—this is the secret to crispy skin! Brush the entire chicken (both sides) generously with olive oil. In a small bowl, combine fine sea salt with
3 tablespoonsof the Culinary Icon Better BBQ Rub. Apply this seasoned rub mixture liberally over the entire surface of the flat chicken. Let it rest at room temperature for 15 minutes before cooking.
3. Set Your Cooking Environment:
-
For Grilling: Set up your grill for two-zone indirect cooking, aiming for a consistent temperature of 275°F (135°C). Add wood chunks or chips (hickory or apple wood are perfect).
-
For Smoking: Preheat your smoker to 275°F (135°C) with your preferred wood.
-
Place the flat chicken, skin-side up, on the cool (indirect) side of the grill or directly on the smoker grate. Cover and cook until the internal temperature of the thickest part of the breast reaches 160°F (71°C) (about 1 hr 30 mins).
4. The Spiked BBQ Lacquer:
-
While the chicken cooks, whisk together all the glaze ingredients (BBQ sauce, brown sugar, vinegar, Worcestershire, remaining Better BBQ Rub, cayenne, and bourbon) in a small saucepan. Bring to a gentle simmer for 5 minutes until thickened. Keep warm.
5. The Grand Finale:
-
When the chicken hits 160°F (71°C), brush the skin generously with the spiked BBQ lacquer. Transfer the chicken (skin-side up) to the hot (direct) side of the grill (or turn the smoker temperature up). Cover and cook for another 5–10 minutes, allowing the glaze to set into a glossy lacquer and the skin to crisp. Watch closely to prevent burning. Remove when the internal temperature hits 165°F (74°C). Let rest for 10 minutes.
6. Blanched Green Beans:
-
While the chicken rests, bring a pot of salted water to a boil. Blanch the trimmed green beans for 3–4 minutes until tender-crisp. Drain and toss with a light drizzle of olive oil.
🍳 Chef's Secret Keys
-
Patience is a Virtue: The secret to incredible smoke flavor is low temperature. Don't rush the process; let the chicken absorb the wood smoke before the final glaze.
-
Lacquer Timing: Wait to apply the sauce until the final 10–15 minutes. The sugar in the sauce can burn easily, and we want a perfect caramelized finish, not a black crust.
-
Rest, Relax, Carve: Resting the chicken is non-negotiable. It allows the juices to redistribute, ensuring your chicken is moist and not dry. After resting, carve the bird into halves, then quarters, for the plate seen in our photo.
