🐖 Master the Pork: Ultra-Juicy Pulled Pork Roast with Better BBQ
Behind the Flavor: The Art of Building a Deep BBQ Bark
In my 27 years across the hospitality industry—from my training at the French Culinary Institute under masters like Jacques Pépin to creating dishes for fine-dining guests and TV audiences—I’ve learned that pork shoulder is the ultimate test of a spice rub.
Because a pork butt or shoulder is a large, thick cut of meat, standard grocery store seasonings often fall flat. They sit on the surface, fade under long cooking times, or get lost in the rich fat.
I formulated Culinary Icon Better BBQ with a robust balance of smoky, savory, and subtly sweet notes. When slow-cooked, it reacts with the natural renders of the meat to form a deeply flavorful, mahogany bark that locks in every drop of juice.
🍽️ The Recipe: Chef’s Ultimate Pulled BBQ Pork Roast
-
Prep Time: 20 minutes
-
Cook Time: 6–8 hours (Oven or Smoker) / 1.5 hours (Pressure Cooker)
-
Yield: Serves 8–10
🛒 Ingredients
-
5–7 lbs: Pork Shoulder or Pork Butt (Bone-in yields the most flavor)
-
½ cup: Culinary Icon Gourmet Spice Blends – Better BBQ
-
3 tbsp: Yellow mustard (acts as the ultimate binder)
-
½ cup: Apple cider vinegar
-
½ cup: Apple juice or water
-
Optional: Your favorite BBQ sauce (for tossing at the end)
👨🍳 Step-by-Step Instructions
1. Prep & Score
-
Pat the pork shoulder dry with paper towels.
-
Using a sharp chef's knife, score the top fat cap in a crosshatch pattern (diamonds), cutting about ½ inch deep. (This helps the fat render out while allowing seasonings to penetrate deep into the meat).
2. Bind & Crust
-
Rub the yellow mustard over the entire surface of the pork.
-
Generously coat every inch with Culinary Icon Better BBQ, massaging the blend into the score marks.
-
Let it sit at room temperature for 30 minutes (or wrap and refrigerate overnight for maximum flavor absorption).
3. Low & Slow Roast (Oven Method)
-
Preheat your oven to 275°F (135°C).
-
Place the pork fat-side up in a heavy Dutch oven or roasting pan.
-
Pour the apple cider vinegar and apple juice around the bottom of the pan (do not pour directly over the meat so you don't wash away your rub!).
-
Cover tightly with foil or a heavy lid and bake for 4 to 5 hours.
4. Uncover for the Bark
-
Remove the cover/foil and increase the heat to 325°F (160°C).
-
Roast uncovered for another 1.5 to 2 hours, until the internal temperature hits 203°F and a fork slides into the center with almost zero resistance.
5. Shred & Serve
-
Let the pork rest uncovered for 20–30 minutes.
-
Use meat claws or two forks to shred the pork. Mix in the pan juices (and a little extra sprinkling of Better BBQ) for an unbelievable burst of flavor!
Chef’s Iconic Tips for Success
💡 Tip 1: The Magic Temperature is 203°F: Don't pull pork out of the oven at 165°F like standard pork loin. Pork shoulder needs to reach 200°F–203°F for the tough connective tissue (collagen) to break down into rich, gelatinous juice.
💡 Tip 2: Re-season After Shredding: Professional pitmasters always add a light dust of fresh rub right after pulling the meat. A light final pinch of Better BBQ right before serving makes every bite pop.
