The Instructions

  • Start the jam first, as it needs to simmer. In a medium saucepan, cook the diced bacon over medium heat until crispy (8–10 minutes). Remove the bacon with a slotted spoon to a paper towel-lined plate, leaving about 2 tablespoons of bacon fat in the pan.

  • Add the chopped onion to the pan with the bacon fat. Reduce the heat to low and sauté slowly for 15–20 minutes until the onions are soft and deeply caramelized. Add the garlic and cook for 1 minute more.

  • Return the cooked bacon to the pan. Stir in the brown sugar, maple syrup, apple cider vinegar, Dijon mustard, and red pepper flakes.

  • Bring to a gentle simmer, then reduce heat and cook, stirring occasionally, until the liquid is mostly evaporated and the jam is thick and syrupy (about 10–12 minutes). Keep warm.
